Mexican Sweet Potatoes

Let’s face it, sweet potatoes are nutritious, affordable, and easy to incorporate into your diet. These sweet, starchy root vegetables are grown worldwide and come in a variety of sizes and colors including orange, white, and purple! Sweet potatoes are rich in vitamins, minerals, antioxidants, and fiber. Not to mention, they provide a number of health benefits and are easy to add to your diet. Here are some of the best health benefits of sweet potatoes!

Sweet potatoes are rich in antioxidants that protect your body from free radicals. Free radicals are unstable molecules that can damage DNA have been linked to chronic illnesses like cancer, heart disease, and aging. Therefore, eating antioxidant-rich foods is good for your health!

They may help support weight loss too. Studies show that about 12% of the starch in sweet potatoes is a resistant starch. This means it is a filling, fiber-like substance that your body doesn’t digest and absorb. One study found that replacing just 5.4% of total carbohydrate intake with resistant starch resulted in a 20 to 30% increase in fat burning after a meal. Resistant starch also prompts the body to pump out more satiety-inducing hormones, meaning you will feel less hungry.

Now, without further ado, my go-to Mexican sweet potatoes

Ingredients

3 medium sweet potatoes
2 green onions
2 chipotle peppers in adobo sauce, minced
1oz cream cheese
1/4 cup sour cream
1 teaspoon salt
1 can corn, drained
1 can black beans, rinsed and drained
1/2 cup chopped cilantro
6 tablespoons shredded Cheddar cheese

Preparation

  1. Cook your sweet potatoes in the oven at 400° for an hour or until tender.

  2. Combine green onions, minced chipotle peppers, cream cheese, sour cream, and salt in a medium bowl.

  3. Combine corn, black beans, and cilantro in another medium bowl.

  4. Slice down the middle of sweet potatoes and top with cream cheese mixture and black bean mixture. Top evenly with cheese.
